1 4-5 pound roaster or fryer chicken (washed, lumps of fat removed, blotted dry)
8 tablespoons rub mix (below) we don't use that much
1 12 ounce can beer or any soda

Directions:
If roasting in oven: smoke baste in 3 tablespoons melted butter with ½ teaspoon liquid smoke.
If grilling: 2 cups hickory wood chips soaked in water one hour, then drained.
Rub: 3 tablespoons Kosher salt, 3 tablespoons black pepper, 3 tablespoons Paprika, 3 tablespoons brown sugar
(we cut all down to 2 tablespoons but pepper we cut to 2¼ teaspoons)

Sprinkle 2 tablespoons rub in cavity of chicken. If roasting in oven, brush outside with smoke and butter mixture. Sprinkle 4 tablespoons rub on outside. Open beer can, make few additional holes in top of can, pour out or drink half of beer and add remaining rub mix to can. Hold the chicken upright, insert with can, spread out the legs of the bird to form tripod. If grilling, set up for indirect grilling and place bird and can in center, away from heat and cook till golden and falls off the bone tender, 2 to 2½ hours. If oven roasting, preheat oven to 350 degrees, place bird upright in pan and roast until golden brown and tender, 2 to 2½ hours. Discard can and contents, serve on platter.
