3-4 lbs. or more of sausages- a variety is good
1 yellow pepper
1 green pepper
1 red pepper
1 medium onion- quartered
small amount of olive oil
sea salt and pepper if desired

Preheat oven to 350
Cut the sausages into bite sized pieces on an angle
Cut peppers into bite sized pieces
Quarter the onion
Add small amount of olive oil to bottom of dish to keep the peppers from sticking.
Add all to a deep dish large casserole dish, season with fresh ground sea salt and ground pepper if desired and put into the oven. Cook for about 45 minutes at 350

Easy and good dish for buffet cocktail party. I cook this in the casserole I will serve it in. You can add more sausages and peppers depending on the size of the group. You just can't mess this up. If you want, start it out on higher heat for 10 minutes and then turn the oven down to 350. You can keep it warm for however much time you need. Also, you can make this ahead of time and just reheat.
A nice variety of hot, spicy, pre-cooked sausages is great.
