1 dozen eggs- boiled and peeled
1/2 cup or so mayonnaise
1-2 tbls. good curry powder
1-2 tbls. miracle whip
1 tbls.finely chopped chives
salt and pepper to taste

Directions:
Directions:
Boil and peel eggs.
Cut in half and pop out the cooked yolk
In a small bowl, add yolks, mayo, curry, miracle whip, chopped chives and curry. Stir with a fork until mashed up and you have a consistency you like.

Add salt and pepper to taste.

Spoon yolk mixture into the halved eggs. Sprinkle with a little paprika or additional curry powder.

I can never remember the best way to cook hard boiled eggs. I usually put the eggs in a pot of cold water, bring to a boil, turn off the heat and let stand for 10 minutes and then pour hot water off and add cold water until cooled down.
