3 medium sweet potatoes (unpeeled if organic)
2 TBS olive oil, plus more for baking sheets
Salt and Pepper

Preheat the oven to 400º. Preheat 2 rimmed baking sheets in the oven.
Cut potatoes into quarters, then into wedges, keeping them about the same size. Put them in a large bowl with olive oil, salt, pepper and any spices you would like.
Swirl a thin layer of olive oil on each hot baking sheet. Carefully scatter the potatoes onto the trays careful to not have them touch. Bake until bottoms are golden, 10-15 minutes, then carefully flip using a spatula and bake until the tops are golden.

Or Sweet Potato Coins
Cut potatoes crosswise into 1/4" coins. Toss with 2 TBS of olive oil so they are completely covered. Sprinkle with salt and pepper, etc. Place on well oiled baking sheet. Cover tightly with foil or another baking sheet. Bake for 30-40 minutes at 400. They should be dark orange and soft. Uncover, and bake for about 20 more minutes, flipping them now and then.
