To make a Thin Sauce:
1 tbsp. fat
1 tbsp. flour
1 cup hot milk
1/2 tsp salt

To make a Medium Sauce:
1 1/2 tbsp. fat
2 tbsp. flour
1 cup hot milk
1/2 tsp salt

To make a Thick Sauce:
2 to 2 1/2 tbsp. fat
3 to 4 tbsp. flour
1 cup hot milk
1/2 tsp. salt

Directions:
Directions:
Melt fat in saucepan; add flour and salt.
Remove from heat and add hot milk gradually, stirring until smooth and thick, about 10 to 15 minutes.
