Giblets, liver, and neck from turkey.
Cream
celery tops
1 tsp salt
1 bay leaf
3 cups water
Turkey broth from roasted turkey
1/2 cup flour
salt and pepper

Directions:
Fix broth ahead of time to prepare gravy and gravy goes together fast when turkey is done.
Cream gives it a special richness.
Combine giblets and neck (do not include liver); handful of celery tops, 1 teaspoon salt, 1 bay leaf, and 3 cups water in a medium size saucepan.
Simmer one hour or until tender.
Add liver during last 20 minutes of cooking.
Strain broth, measure; add water if needed to make 3 cups.
Chop giblets into small pieces and stir into broth.
Cool and chill until ready to make gravy,

After turkey has been removed from the roasting pan let fat rise in one corner.
Pour off all fat into a cup. leaving juices in pan. Return 8 tbsp. fat to pan then blend in 1/2 cup flour (no lumps).
Cook stirring constantly just until bubbly.
Stir in 3 cups broth and giblets plus 1 tbsp. cream.
Continue cooking and stirring, scraping baked -on juices from bottom and sides of pan until gravy thickens and boils one minute.
Season to taste with salt and pepper.
