4 slices bacon, cut up
1 large onion, chopped
3 cups diced potatoes
2 tsp sugar
1 tsp salt
¼ tsp thyme
1 bay leaf
⅓ tsp pepper
1 can stewed tomatoes
2 cups water
1 package frozen fish fillets

Directions:
Directions:
Fry bacon pieces in kettle until crisp. Add onions and potatoes; sauté until onions are golden. Stir in seasonings, tomatoes, and water. Cover; simmer 25 minutes. Add frozen fish and cook 20 minutes longer. When fillets thaw in the mixture, break them into large chunks. Top with grated cheese, if desired, when serving.
