Ingredients:
Ingredients:
1 (1-lb box) brown sugar (2⅓ cups)
⅔ cups shortening
3 extra large eggs
1 tsp vanilla
3 cups flour
3 tsp baking powder
½ tsp salt
1 cup nuts, chopped
1 cup chocolate chips, semi-sweet

Directions:
Directions:
Combine sugar, shortening, eggs and vanilla; beat well in an electric mixer. Sift flour, baking powder and salt. Add ½ of the dry ingredients to the mixer and beat well. Add the rest of the dry ingredients by hand and stir well. Add nuts and chocolate chips; mix well. Grease and flour a large pan (11X15-inches); dampen hands and spread out mixture. Bake at 350º for 25 to 30 minutes. Cool a little and cut into squares. If you leave them until the pan is cold, they will be hard to get out of the pan!

Personal Notes:
Personal Notes:
Vernie: "Theo Carrothers gave me this recipe in Sacramento, CA when I was a new bride. I have been making Congo Squares for 54 years!"

Susy: This is one of my mom's signature cookies. I remember that she used to make a batch, cut and pack them into a washed Crisco container and hide them in the house. If she didn't hide them, they'd be gone in a minute! When cutting them, she would cut off the edges to make everything square and flat. Those edges were my favorite!
