6 sweet potatoes (med. size)
4 T. oil (2 for to spread around potatos and 2 to saute spinach)
3 slabs of bacon
2 cloves of garlic
6 cups spinach
salt and pepper
chimichurri
1 inch butter
2 T. olives cut or take apart
Sprinkle Parmigiano-Reggiano
2T dried cranberries or fresh pomegranate

400º
Clean, prick with knives, and cover with oil Cook for 45 mins-1 hour
Saute bacon, dry, cool off and cut small peices
Saute spinach (not wilted and more than 1 inch long) with garlic and salt and pepper
Take out sweet potatos,and slice in the middle immediately After 15-30 minutes add butter and mash inside
Adding everything together, plus chimichurri and slices of olive, stuff potatoes
When cook add Parmigiano-Reggiano or other cheese
Heat up in oven again (covered with foil) 375º
Cranberry for decoration
