2 ripe mangos
1 small jicama
2 small tomatoes
1 small red onion
cilantro, chopped
fresh basil, chopped
1 avocado, sliced

Dressing:
1/4 c fresh lime juice
1/4 extra virgin olive oil
1/2 tsp kosher salt
1/4 tsp cumin
4 - 5 dashes tabasco
1/2 tsp sugar
1 clove garlic, finely minced.
Directions:

Slice the cheeks off the mango, peel and slice in moon shapes. Slice the red onion and cut the jicama in shoe strings. Dice the tomatoes and remove some of the seeds. Mix all of the fruits/vegetables, except the avocado, together with the fresh cilantro and basil.

Mix all of the dressing ingredients together and toss with the fruits and vegetables. then gently fold in the avocado, being careful not to mash-up it too much.

This is not really a recipe as most of what I cook is something that I just make up. This mango salsa is so versatile that you can add anything. Rather than tomatoes try red bell peppers ... use any type of hot sauce... eliminate the sugar as I always do ... substitute kohl rabbi for the jicama. The main characters are the mango, red onion, garlic, basil and cilantro. lime and good olive oil
