6-8 boneless skirt steaks
flour or corn tortillas

Marinade:
1/3 cup red wine vinegar
1/3 cup olive oil
1 tsp. oregano
1/4 tsp. pepper

Salsa Fresca:
1 large onion, finely chopped
1/2 green pepper, chopped
2 tbsp. butter
4 medium tomatoes, peeled, seeded, cut into medium chunks
1 tsp. sugar
2 tsp. vinegar
salt, pepper and hot sauce to taste

Directions:
Place skirt steaks in a large glass baking dish. Marinade: Combine all the ingredients and pour over the meat. Refrigerate for at least 4 hours, turning occasionally. Grill steaks, brushing with marinade. Salsa Fresca: Put a medium saucepan on the grill; sauté onion and green pepper in butter for 10 minutes. Add tomato chunks, sugar and vinegar; heat through. Season with salt, pepper and hot sauce. Serve with grilled steak.

This is a great summer recipe to make on the grill. You can serve it with some guacamole, chips, margaritas and/or ice cold Mexican beer. It just doesn't get any better!
