1/2 lb. Penne pasta
2 tbsp. olive oil
1 cup onion, diced
8 oz. ground sausage
1 tbsp. flour
1/2 cup chicken broth
1 large Granny Smith apple, diced
1/2 tsp. salt
1/4 tsp. pepper
6 oz. fresh spinach
2 cups Asiago cheese, grated

Directions:
Preheat oven to 350º F.
In a large pot, bring 2 quarts of water to a boil. Add 1 tbsp. olive oil to penne. Boil for 12 minutes. Drain and set aside.
Meanwhile, in a large sauce pan, cook 1 tbsp. olive oil and onions on a medium high heat until onions are caramelized. Place onions in a quiche dish.
Back in your saute' pan, cook sausage until no longer pink, 5 to 7 minutes. Stir in flour and cook 1 minute more.
Add in chicken broth and bring to a simmer. Stir in diced apples, salt and pepper. Cover and cook for 5 minutes on medium low. Add spinach, cover and cook until wilted. Stir in onions, pasta and 1 cup cheese.
Pour all into quiche dish. Top with remaining cheese. Bake for 5 minutes or until cheese is melted.
