1 pound ground beef
1 large onion
1 large can V-8 Juice (regular or spicy--your choice)
1 can Del Monte mixed vegetables (Lucy said make sure you use Del Monte)
1 can cream of mushroom soup

Brown meat and drain. Add onions until clear. Add other ingredients and simmer from 20 minutes to an hour. You'll probably want to double or triple this recipe. It tastes incredible--much better than it sounds!

Lucy Dade was the matriarch of the Davis family. Raising her family on a shoestring, she put together some awesome recipes that were simple and easy yet were tasty and filling. This particular recipe was used by Carol at work one year when there was an ice storm and over 150 technicians were brought in to help get the cable tv plant up and working. Over 15 years later, employees from all over Ohio and Pennsylvania who came to help out still mention the big pots of "Aunt Lucy's Soup" that were simmering all day for them to come in and eat when they were warming up
