Ingredients: 4 Halibut fillets, 5 oz. each... 1/4 cup extra-virgin olive oil... 2 T fresh lemon juice... 1/4 t kosher salt... 1/4 t freshly ground black pepper... 2 large cloves of garlic, smashed..,
Needs for crispy shallots
1/2 cup grape seed oil... 3 large shallots, cut into rounds, separated into rings... Lemon wedges, for garnish...
Needs for lemon-butter
1 T fresh lemon juice... 1/4 t kosher salt... 1/4 t freshly ground black pepper... Zest of 1 large lemon... 1 or 2 sticks of unsalted butter, at room temperature.........I use 1 stick, to me, better flavoring....

Directions:For the Halibut
Combine the olive oil, lemon juice, garlic, salt and pepper in an 8 by 8 glass dish... Whisk the marinate to blend, add the Halibut and turn it several times to coat fish evenly.... Let it stand for 20 minutes...
For the crispy shallots
Combine the grape seed oil and shallots in a heavy sauce pan over medium-high heat... Cook stirring often, until the oil heats up and shallots turn a golden brown, about 20 minutes... Transfer shallots with a slotted spoon to several layers of paper towels to drain and crisp up.... Sprinkle with salt and pepper, just before plating with the Halibut...
Heat large nonstick skillet over medium-high heat... Take Halibut from marinate, letting excess marinate drip off first and add it to the hot skillet... Sear it for 3 minutes... Flip it and sear for another 3 minutes, depending on how thick the fish is, if thick you may need to sear it a it longer... Transfer to plate and top with lemon-butter and a pile of crispy shallots on top of that.... Enjoy!!
For lemon-butter
Whisk together the lemon juice, salt, pepper, lemon zest and butter in a deep bowl...mixture will be like a thick sauce... Set it aside until you use it on fish...
