1-2 lb. chicken cut up
½ lb. mushrooms sliced
¾ chicken stock
1 ½ c. red wine (I cook with what I drink)
½ tsp. chopped fresh tarragon (I put in at least a tablespoon)
2 tsp. butter
2 tsp. oil
salt and pepper
2 cloves garlic chopped
1 onion chopped

Directions:

Roll chicken in flour, salt and pepper. Brown chicken in butter and oil. Place in casserole. Saute mushrooms, onion and garlic, and add to the casserole with wine and tarragon. Swirl stock into pan and pour over all. Cover and cook at 350 degrees for 1 ¼ hours. Reduce to 300 degrees. Uncover and cook 15 minutes more.

(I make this recipe on the stove top on very low heat. Last 20-30 minutes uncovered.)
