Pimento Cheese

1 egg
1 T. sugar
2 T. apple cider vinegar
pinch of salt
1 lb. Colby (or Longhorn) cheese, shredded
home-canned pimentos (see recipe below)

Angie's fix for home canned pimentos:
4 oz. jar of pimentos, drained
1/3 c. sugar
1/3 c. apple cider vinegar

Beat the egg. Add sugar, vinegar and salt. Cook in a heavy pan. It will thicken fast. Grandma Cassel said you could add pimento juice, milk or cream if it gets too thick. Gran-Gran adds Miracle Whip. Mix the dressing with shredded cheese and chopped pimentos.

Angie's quick fix for not having home canned pimentos: The night before, bring 1/3 c. apple cider vinegar and 1/3 c. sugar to a boil. Add pimentos and return to a boil. Shut off the heat and let cool. Store in the fridge over night. Drain liquid before making the pimento cheese. You may want to reserve some of the juice in case your mayo is too thick.
 

Canning Pimentos

fresh pimentos
apple cider vinegar
sugar

Use 1/2 pint jars. Slice and clean the pimentos. Soak in hot water until limber. Cut into smaller pieces and remove any discoloration. Make a syrup of equal amounts of sugar and apple cider vinegar. Cook until the sugar dissolves and the syrup is hot, but do not boil.

I successfully made pimento cheese without canning the pimentos. I made a syrup of equal parts vinegar and sugar and boiled it. I then added a couple of small jars of drained pimentos to the boiling syrup. Let the mixture sit for a couple of hours or overnight, and then drain the pimentos and use them in the pimento cheese.
