1/2 lb Jimmy Dean sausage, browned & drained (or use ham or bacon, cut up & cooked)
10 eggs
1/2 c milk
1/2 c chopped onion or spinach OR some of each
1/4 c chopped green or red pepper
1/2 tsp salt
3/4 tsp baking powder
1/4 tsp garlic powder
1/4 tsp pepper
pinch of dry mustard
1/2 c shredded cheddar cheese

Preheat oven to 350. Cut up or cook meat and drain.. Cut up veggies. Spray muffin tins or I use silicon baking cups (easy clean-up). Divide and place meat & chopped veggies evenly among 12 cups. Divide and sprinkle cheese on top. In a bowl, beat and combine eggs, milk, seasonings, and baking powder. Pour mixture into each cup to almost near the top. Bake 20-25 minutes until knife in center comes out clean. Eat now, refrigerate or freeze leftovers. Warm in microwave for 30-60 seconds for quick protein breakfast on the go.
