2 c flour
2 T brown sugar
1 T baking powder
1 tsp cinnamon
1/4 tsp ground ginger
1 tsp salt
1 egg
1 tsp vanilla
1/2 c canned pumpkin
1 3/4 c milk
2 T vegetable oil
*optional -mini or regular chocolate chips

Directions:
Directions:
Combine flour, brown sugar, baking powder, spices, and salt in large bowl. In a small bowl, stir together egg, vanilla, pumpkin, milk, and oil until well-mixed. Add the wet ingredients to the dry-- stirring just until all moist and mixed together. Batter will be thick and lumpy. Heat skillet & cook as you would regular pancakes. After you pour a pancake in skillet or griddle, you can sprinkle chocolate chips on top, then flip when ready. Serve with whipped cream, powdered sugar, or syrup. Grandkids love this recipe when if use chocolate chips & serve with butter and powdered sugar on top. Freeze after cooked if desired.
