1 ¼ cups warm water (not hot 110-115 degrees)
1 pkg active dry yeast
2 tbsp soft shortening
2 tsp salt
2 tbsp sugar
3 cups sifted all purpose flour

1 ¼ cups warm water (not hot 110-115 degrees)
1 pkg active dry yeast
2 tbsp soft shortening
2 tsp salt
2 tbsp sugar
3 cups sifted gold medal flour

In mixing bowl dissolve yeast in water. Add shortening, salt, sugar and half the flour. Beat 2 minutes a medium mixer speed or 300 strokes by hand. Scrape sides and bottom of bowl frequently. Add remaining flour and blend in with spoon until smooth. Scrape batter from sides of bowl, cover with cloth and let rise in warm place about 30 minutes. Then beat batter about 25 strokes and spread it evenly into greased loaf pan. Smoth top and pat into shape with floured hand. Let rise again until batter reaches 1/4” from top of 8.5 inch loaf or 1” from top of 9” loaf pan. Heat oven to 375. Bake 45 to 50 minutes until brown. Remove from pan. Place on cooling rack. Brush top with melted butter or shortening. Cool before cutting but not in direct draft. For delicious wheat bread omit 1 cup of white flour and instead put in 1 cu of whole wheat flour and instead of sugar add molasses or brown sugar or honey.
