2 gallons (32 cups) of water
2 cups Kosher salt
2 cups brown sugar
2 Tbsp black peppercorns coarsely cracked

Directions:
Directions:
Heat 4 cups of water, salt, and sugar on the stovetop until dissolved. Not all of the salt will dissolve. Stir in the peppercorns. Pour the mixture with the rest of the water into a container large enough to hold the turkey and liquid. Stir mixture before adding the turkey. Refrigerate for 12-15 hours. Rinse the turkey thoroughly with cold water and pat dry before seasoning.
