32 piezas de tortilla de harina
2 diente de ajo
2 pieza de pechuga de pollo deshebrada
1 lata de leche evaporada
queso manchego al gusto
1/2 caldo de pollo
4 cucharadas de fécula de maíz
2 pieza de chile serrano
8 piezas de tomate verde (tomatillo)
2 tazas de agua del pollo
1/4 pieza de cebolla blanca
1 cuchadita sal

350º for 30 min

1. Licuar los tomates, la leche evaporada, la fécula de maíz, el chile serrano, el agua, los ajos y la cebolla. Si van a comer niños, les recomiendo quitarle al chile serrano todas las semillas, para que le dé sabor a la salsa, pero no pique.

2. Calentar la mezcla el tiempo suficiente hasta que esté espesa. Sazonar con sal y caldo de pollo en polvo al gusto (1/2).

3. Pasar las tortillas por el aceite caliente. Después, rellenarlas con el pollo deshebrado, enrollarlas para formar las enchiladas, y bañar con la salsa caliente.

4. Agregar el queso para gratinar, y meter al horno unos minutos para que se derrita. Puedes acompañar estas enchiladas con frijoles, o sustituir el pollo deshebrado con jamón de pavo para darle variedad. Prueba sustituir las tortillas por crepas, y entonces tendrás "Crepas Suizas".
