5 1/2 cups Milk
Yogurt or Kefir Starter Culture
Fruit or jam of choice
sugar, agave or honey
Yogurt maker
Thermometer

In a deep pan or double boiler warm milk to 160º-180º and hold for 60 seconds. Cool with time or an Ice Bath to 110º and add starter culture.
If you are using a Thermos Style then pour entire contents inside, giving a quick swirl before dumping the last of it in. Close it up and place in a temperature stable area. Let sit up to 12 hours, depending on culture directions.
If Jar style yogurt make, start filling jars to 3/4 full. Swirl last bit of milk mixture several times then top off the jars. This ensures distribution of the culture into each jar, leaving space to add things later. Run machine according to directions.

Once allotted time has passed, add sweetener and Fruit to taste and give a good stir making sure to scrape the bottom.

For jars, use about a tsp. of fruit. For Thermos style, between 1/4 cup and 1/3rd cup. If using Jam, use less as it is concentrated. If you use fresh fruit, you will want to crush the fruit inside the yogurt.
