Fresh Okra (about 2 1/2 - 3 cups)
Oil
Corn Meal

Directions:

Wash fresh okra and cut into 1/2 inch pieces. Sprinkle with corn meal mixed with 2 Tblsp flour. Thoroughly coat the okra.

Cover bottom of a large frying with canola or vegetable oil and heat. (Don't use olive oil.)

When oil is hot, add okra to cover bottom of pan. (Lower to medium heat or lower)

Fry okra for a few minutes on one side. When it begins to brown flip over. Lower heat further and cover for a few minutes. When all sides are browned remove from pan and put in a bowl with several paper towels in the bottom to absorb excess oil.

If using frozen okra, do not thaw entirely. Only partially thaw the okra and coat with corn meal and flour mixture and fry.
