1 1/2 cups Macadamia nuts, chopped coarsely
1 1/2 tsp. Pink Himalayan Sea Salt
1/2 tsp. white pepper
1/4 tsp. Turmeric
1/2 tsp. garlic powder
2 Tbsp. Italian Seasoning
1/4 cup Grated parmesan cheese
1/2 cup Shredded Parmesan cheese
2-3 Rainbow Trout Filets
2-3 tbsp. olive oil

Directions:

Cut fish into preferred portion sizes, leaving skin on and set aside. In a large bowl mix, add first 8 ingredients and mix well. Add the Shredded Parmesan last and gently toss until mixed. Pour a bit of breading mixture into a flat dish to coat the fish and bag the rest for another night.
Add olive oil to skillet and warm.
Lightly salt the fish to taste. Gently press each fillet flesh down into the breading mixture, then carefully place each skin down/breading up in skillet. Add a little more breading to fill in any bare spots. Cover and cook over a low/medium heat , until edges turn dark golden brown. Flip Fillets over and let sizzle for 8-10 minutes or until breading is browned and lightly crispy.
