Ingredients: 2 pkgs. yeast 1/2 cup warm water 1/2 cup milk 1 cup pineapple juice 1/2 cup butter, melted 3/4 cup sugar 2 tsp. salt 1 tsp. vanilla extract 3 eggs, beaten 6 to 7 cups flour 1 drop yellow food coloring (optional)
1 egg, slightly beaten with 1 tbsp. water

Directions:In a small bowl, combine the yeast and warm water. Let sit for 5 minutes. In a microwavable bowl, heat the milk, pineapple juice, butter, sugar, salt and vanilla until just warm. In a large bowl, add the heated milk mixture, yeast mixture and beaten eggs. Add 2 cups of flour; mix well. Keep adding the flour until dough is formed, enough to turn out onto a floured surface. Knead for about 5 minutes or until the dough is smooth. Put into a greased bowl and cover with a tea towel or plastic wrap. Let rise in a warm place until doubled; about 1 1/2 hours. Turn dough out onto a lightly floured surface and punch down. Shape into 2 round loaves and put into greased 9-inch pie pans. Cover and let rise for another hour. Brush the egg/water mixture on top of each loaf. Bake in a preheated 350º oven for 35 to 45 minutes or until golden brown. |

Notes: Mom used to arrange conventions for Baxter Drugs and one year they were held in Hawaii. She ate this delicious bread every day for breakfast and asked the waitstaff where it was from. They told her it was made in-house. The pastry chef gave her the recipe before she left. It was for a huge batch, but she was able to cut it down. It is so delicious and definitely better than the "Hawaiian Bread" you buy at the supermarket. But be careful, do not rush making it. Allow at least 5 hours from beginning to end. Believe me, it is so worth the wait!
