2 cups flour
1 1/2 cups vegetable oil
1 tsp. baking powder
5 eggs
3/4 tsp. baking soda
2 cups grated carrots
1 tsp. salt
8 1/2 oz. crushed pineapple
2 tsp. cinnamon
1/2 chopped nuts
2 cups sugar
1/2 cup raisins

Directions:
Directions:
Sift dry ingredients together. Beat eggs, add to dry mix with oil, mix
well. Add remaining ingredients. Grease and flour pans. Bake at
350 for 35-40 minutes or untill a toothpick inserted in center is dry. Cool and
frost with Cream Cheese Frosting, if desired.

CREAM CHEESE FROSTING
Cream together 1/2 cup butter, 8 oz. cream cheese, 1 tsp. vanilla, beat
in 1 lb. confectioners sugar. Add milk to thin is needed.

This is exactly how I copied Mom's recipe years ago. No pans were specified, but I used two Pyrex loaf pans.
