2 cups flour
2/3 cup unsweetened cocoa powder
1 tsp. baking soda
1/4 tsp. baking powder
1 1/3 cups sugar
3 eggs
1 tsp. vanilla extract
1 cup Hellman's Real Mayonnaise
1 1/3 cups water

Frosting:
6 tbsp. butter, softened
3/4 cup unsweetened cocoa powder
3 1/2 cups powdered sugar
6 tbsp. milk
1 tsp. vanilla extract

Directions:
Directions:
In a medium bowl, combine the flour, cocoa, baking soda and baking powder. In a large bowl, using an electric mixer at high speed, beat sugar, eggs and vanilla for 3 minutes or until light and fluffy. Reduce to low speed and beat in the mayonnaise. Alternately beat in the flour mixture and the water into the wet mixture; beat well. Pour the batter into two 9-inch round cake pans that have been buttered and lined with a circle of parchment paper on the bottom. Bake in a preheated 350º oven for 25 minutes or until toothpick inserted comes out clean. Cool the layers for 10 minutes, then run a knife around the edges of the pan and invert to racks. Peel off the parchment paper and let cool. Frosting: Beat the butter with an electric mixer on medium speed until light and fluffy. Alternately beat in the cocoa, the powdered sugar and the milk. Beat in the vanilla and continue beating until light and fluffy. Frost the cake when it is completely cooled.

Rumor had it that Portillo's incredible chocolate cake had mayonnaise in it. It may sound weird, but when I saw this copycat recipe for their cake, I decided to make it. I bought a piece from Portillo's and put them side by side. I did the family "Blind Taste Testing" and ours was the winner...by a landslide! I think it might have been the chocolate frosting: Portillo's tasted like it was from a can...sorry old friend!
