3 cups cooked chicken breast, cut into medium chunks
1 lb. seedless grapes, cut lengthwise in half
8 oz. can pineapple chunks, drained
3/4 cup celery, diced small
3/4 cup sliced water chestnuts
1/2 cup slivered almonds, toasted

Dressing:
1 cup mayonnaise
4 tsp. lemon juice
2 tsp. soy sauce
1/2 to 1 tsp. curry powder (depending on your taste)
1/8 tsp. Worcestershire sauce
1 cup shredded coconut (optional)

Directions:
Directions:
In a large bowl, add chicken, grapes, pineapple, celery, water chestnuts and slivered almonds; mix gently. Dressing: In a separate bowl, mix all the ingredients together. Add dressing to chicken mixture; combine thoroughly. Refrigerate for at least 2 hours. You can top with shredded coconut, if desired.

Mom was served this salad at a spring luncheon and really enjoyed it. The recipe was developed by Liz Manchester of Alexandria, Virginia. Her friend passed it on to mom, after changing the recipe size from serving 50 people to serving 8.
