2 cups dry white wine
4 large shallots, finely chopped
4 garlic cloves, finely chopped
1/2 tsp salt
4 lb live mussels
1/3 c.chopped fresh parsley
6 TBS butter, cut into pieces

Directions:
Directions:
Rinse and scrub mussels under cold running water. Using your fingers or a paring knife, remove beards (strings that hang from the mussels' shells), and discard.
In a large stockpot set over medium heat, combine wine, shallots, garlic, and salt. Simmer 5 minutes. Add mussels.
Cover, and increase heat to high. Cook until all mussels are open, about 5 minutes. DO NOT EAT the mussels that are not open. Stir in herbs and butter. Remove from heat. Divide mussels and broth among four bowls. Serve immediately.
Serve with crusty garlic bread.

This is amazing and is best served with garlic bread to sop up the juices or as the Italians use the term Scarpetta "to Sop".
