Filling:
1 can crushed pineapple
1 C. white sugar
3 Tbsp. corn starch
1/4 tsp. salt
1 tsp. lemon juice
1 egg, slightly beaten

Directions:
Directions:
Combine above ingredients and cook on medium heat until boiling or until thickened. Must stir constantly to avoid scorching. Set aside.

Crust: 2 1/2 C. flour, 3/4 C. white sugar
Sift together and add: 1 C. plus 2 Tbsp. butter, 2 tsp. vanilla

Mix like pie crust until crumbly. Spread 1/2 to 2/3 in bottom of 9x13 glass baking dish and press firmly in bottom. Cover with filling. Sprinkle remaining crust evenly over top and bake at 350 for 45 - 55 min. Cut into bars.
