2 (10 oz.) pkgs. frozen chopped spinach
6 oz. chicken flavored stuffing mix
1 c. grated Parmesan
6 eggs, slightly beaten
3/4 c. melted butter
Salt & pepper to taste

Directions:
Directions:
Cook spinach according to package directions; drain in sieve, pressing out moisture. In medium bowl, combine spinach, stuffing mix, cheese, eggs, butter, salt and pepper. Mix thoroughly; roll in balls (or use small cookie scoop) 1 1/2" in diameter. If desired, place on cookie sheets; freeze. Store in freezer bags. Bake at 350º. If baked fresh, bake 7-10 minutes, if frozen, 10-15 minutes. Yields 80 balls.
