10 medium onions (or 20 small)
1 gallon cucumber slices
1/2 cup plain salt
2 trays ice cubes
5 cups sugar
5 cups white vinegar
1 tsp. celery seed
1 tsp. pickling spice

Directions:
Directions:
In a large dishpan, place cucumber slices and onions in layers. Sprinkle each layer with salt. Put ice cubes all over the top. Cover with aluminum foil and let stand for 3 hours. Drain and remove excess ice. Pour into large enamel or stainless steel pot. Do not use aluminum.
Combine sugar, vinegar, celery seed and pickling spice to make pickling solution. Pour over cucumbers and onions in pot.
Heat on low, stirring often. Do Not boil! If you have a candy thermometer, the temperature should reach no more than 200º F. Pour into sterilized hot jars. Seal with hot lids and cap. Let stand 48 hours before using. Tighten caps.
