1 lb venison roast
Sea salt
Freshly ground black pepper
1/4 cup extra-virgin olive oil
1 celery stalk, chopped
1/2 cup chopped sweet onion
1 teaspoon minced garlic
1 cup beef broth
2 bay leaves
1 teaspoon dried thyme

Directions:
Directions:
1. Preheat the oven to 275ºF.

2. Season the roast with salt and pepper.

3. In a large, ovenproof skillet over medium-high heat, heat the olive oil.

4. Sear the roast on all sides until lightly browned, about 5 minutes total.

5. Add the celery, onion, and garlic to the skillet, and saute until softened, about 3 minutes.

6. Return the roast to the skillet with any accumulated juices on the plate, and stir in the beef broth, bay leaves, and thyme.

7. Cook the roast in the oven for 2 hours, turning it occasionally.

8. Remove the skillet from the oven, and take out the bay leaves.

9. Let the roast rest for 10 minutes before serving it with the pan drippings.
