3 c. grated carrots
1 c. brown sugar
1 c. white sugar
4 eggs
1 1/2 c. oil
2 c. flour
2 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
1 tsp. vanilla

Icing:
2 c. icing sugar
8 oz softened cream cheese
4 Tbsp butter, softened
1 tsp. vanilla

Directions:
Directions:
1. Preheat oven to 350°F.
2. Mix dry ingredients together. Add carrot, beaten eggs, vanilla and oil: mix well. Pour into a 9x13" pan.
3. Baked for 35 to 40 mins. or until done. When cake has cooled, apply icing.
4. Icing: Mix cream cheese and butter until smooth. Add remaining ingredients. Mix well.
