1/2 c. butter
1/4 c. icing sugar
1 c. flour
1/2 tsp. salt
2 eggs, slightly beaten
1 c. sugar
2 1/2 Tbsp. flour
3 Tbsp. lemon juice (1 Tbsp. grated lemon rind, optional)

Directions:
Directions:
1. Preheat oven to 350F. Cut together first four ingredients with a pastry blender. Spread and pack into an 8" square pan which as been lightly greased. Bake for 20 mins.
2. Mix remaining ingredients (except icing sugar) and pour over baked base. Bake at 350F for 20 mins. Cool slightly & sift icing sugar over the top. Cut into squares when cold.

Can be doubled in a 9x13" pan. Add a bit more lemon juice when doubling.
