2-3 lbs. Yellow Squash
1 stick margarine or butter
1 small onion, chopped
salt & pepper to taste
1 c. milk
2 eggs
2 tbsp. sugar
20 Saltine crackers, crushed

Directions:
Directions:
Wash, peel and slice squash. Cook with onion in lightly salted water until just tender. Drain WELL. Melt 2/3 stick of butter and pour over squash. Salt & pepper to taste and mix well. Place squash mixture in a buttered 13 x 9 in. casserole dish. Beat eggs, milk and sugar together. Pour over squash. Dot with remaining butter and cover with cracker crumbs.
Bake in a 350º oven about 40 minutes or until brown.
