1 3/4 cups flour
2 tsp. baking powder
3 tbsp. sugar
3 egg yolks, beaten
1 3/4 cups milk
1 tbsp. vanilla extract
1/2 cup vegetable oil
3 egg whites, beaten stiffly
Directions:
Directions:
Mix all dry ingredients. Combine egg yolks, milk and vanilla. Stir into dry ingredients. Add oil; mix. Beat egg whites to stiff peaks. Gently fold in egg whites, do not overmix. Pour 1/2 cup of batter into hot waffle iron.

These waffles are my favorite breakfast to prepare for house guests and are wonderful topped with syrup, fresh fruit, whipped cream or just plain. They are the best served hot off the iron, but any extra waffles can be frozen in zip lock bags and toasted later. Be forewarned; it's hard to keep up with the demand.
