22.5 oz. unbleached bread flour
.5 oz. salt or 10g kosher salt, or 1.5 t table salt
1 t instant yeast; or 1.25 t dry active yeast dissolved in .25c warm water
.5 oz sugar; or 2 t honey
.5 oz, olive oil
16 oz. water, room temperature

Preheat oven to max temperature and heat pizza stone.

Add dry ingredients in stand mixer, mix to distribute, add liquid ingredients, mix until fully hydrated. Let dough rest 1 to 5 minutes, mix on med-low speed for 5 minutes. The dough should be very tacky, add more water or flour as needed.

Rub olive oil on counter, dump out the dough, fold in thirds, rotate and fold in thirds again, turn over, cover with a bowl and rest dough for 5 minutes, repeat 3 to 5 times.

Stretch the dough, compile pizza, and bake until crispy.
