"Quick" Lemon Meringue Pie Recipe

Mix in a saucepan, in this order:

3 tbsp. corn starch
1-1/2 c. sugar
3/8 c. fresh lemon juice
Grated rind of 1 lemon
3 egg yolks
1-1/4 c. boiling water

Directions:
Directions:
Bring to a boil over moderate heat, stirring constantly. Cook until thick and smooth. Stir in a chuck of butter. Cool. Pour into a baked 8-9 inch pie shell. Add meringue and bake at 400° until meringue is a delicate brown.

You may cook the filling in the microwave, instead, so there is no sticky pan to scrub.

Meringue: Beat 3 egg whites until very stiff. Add 8 tbsp. of sugar, one tbsp at a time, beating after each addition. Flavor with 1/4 tsp. lemon extract. Spread over filling, bringing in in contact with the crust all around the edge, to avoid shrinking.

This is Helene's recipe, the one that I have always used for George's birthday pie. I usually make a graham cracker crust.
