Ingredients: 2 (10 oz) packages frozen chopped spinach 3 cups herb seasoned stuffing mix 1 large onion, finely diced 6 eggs, well-beaten 3/4 cup melted butter 1/2 cup freshly grated parmesan cheese 2 - 4 teaspoons black pepper (to taste) 1/2 teaspoon garlic salt 1/2 teaspoon thyme

Directions:Cook spinach according to package directions. Drain well and squeeze dry (a salad spinner works well). Combine spinach with remaining ingredients and mix well. Shape mixture into 3/4-inch balls (the size of large marbles) and place on a lightly greased baking sheet. Bake at 350 degrees for 15-20 minutes until balls are firm and edges are brown.
Note: Balls can be frozen before baking. Place on a cookie sheet and freeze for 45 minutes. When frozen, remove from cookie sheet and store in plastic zipper bags. Thaw slightly before baking.
