1) Heat a tablespoon of cooking oil in a large frying pan.
2) Add a cup of chopped onions and fry until golden.
3) Stir in a can of kidney beans.
4) Stir in a can of chopped tomatoes.
5) Stir and simmer for at least half an hour to give all the ingredients a chance to blend.
6) Serve in a bowl with salad and slice of whole wheat, buttered bread.. .

Recipe can easily be doubled or tripled for larger groups.

This is a simple dish that is fragrant and hearty Its odors filled the whole house and made our mouths water. It was my mother's favorite dish and she always requested it for her birthday. Dad was a meat kind of guy, so my mother fixed other dishes more to his liking. When we kids came home from school and smelled this dish being prepared in the kitchen we said "Oh, Dad's not home for dinner tonight."
