3 oz fresh apple juice
3 tbsp soy sauce
1 tbsp unsalted butter
1 small garlic clove, crushed
1 salmon fillet, 1 1/2 to 2 lbs

Directions:
Directions:
1. In a small noncorrodible saucepan, combine the apple juice and soy sauce. Bring to a boil over high heat, reduce the heat to moderate and simmer for 3 minutes. Add the butter and garlic and continue cooking, stirring occasionally, until the liquid thickens enough to coat the back of a spoon, about 10-15 minutes. Remove the marinade from the heat. Let cool to room temperature.
2. Pat the salmon fillet dry and place it skin-side down on a rack or pan. Brush the marinade evenly over the salmon. Let stand at room temperature for about 30 minutes.
3. Grill the salmon skin down, then turn halfway through the cooking.
