2 lbs fingerling potatoes (I usually use Trader Joe's Teeny Tiny Potatoes)
2Tbsps olive oil
1/2 Tbsp Kosher salt
1/3 Tbsp ground black pepper
1Tbsp Dijon mustard
1 Tbsp Honey

Directions:
Directions:
1. Preheat oven to 425. Wash potatoes in cool water, pat dry, and set aside.
2. In a large mixing bowl, toss together olive oil, salt, pepper, mustard and honey. Add potatoes to mixture and coat each potato well. Transfer potatoes to a 13 x 9 baking dish.
3. Place in center of oven and bake uncovered 25 minutes or until easily pierced with a fork.
