2 cups leftover Turkey or Chicken
1 cup Chopped Celery
Ĺ cup sliced Toasted Almonds or Water Chestnuts
Ĺ tsp Salt
Ĺ tsp Lemon Zest
2 tbsp Lemon Juice
⅔ cup Mayonnaise
Ĺ cup Grated Cheese (American, Cheddar, Monterey Jack)
1 cup crushed Potato Chips

Directions:
Directions:
In a large bowl, mix together all ingredients except potato chips. Coat 8x10 casserole dish with cooking spay. Place mixture into casserole and top with potato chips. Bake in 450įF oven for 10 minutes. Serve on lettuce lined salad plate with tomato wedges or as a sandwich on toasted bread.

Another good use for that leftover holiday bird. I also make a cold salad using the same ingredients plus diced apple and halved grapes. Omit water chestnuts and potato chips. If there are no leftovers, bake a couple of chicken breasts.
