2 cups leftover Turkey or Chicken
1 cup Chopped Celery
½ cup sliced Toasted Almonds or Water Chestnuts
½ tsp Salt
½ tsp Lemon Zest
2 tbsp Lemon Juice
⅔ cup Mayonnaise
½ cup Grated Cheese (American, Cheddar, Monterey Jack)
1 cup crushed Potato Chips

Directions:
Directions:
In a large bowl, mix together all ingredients except potato chips. Coat 8x10 casserole dish with cooking spay. Place mixture into casserole and top with potato chips. Bake in 450°F oven for 10 minutes. Serve on lettuce lined salad plate with tomato wedges or as a sandwich on toasted bread.

Another good use for that leftover holiday bird. I also make a cold salad using the same ingredients plus diced apple and halved grapes. Omit water chestnuts and potato chips. If there are no leftovers, bake a couple of chicken breasts.
