1 cup butter or margarine
1 1/4 cups brown sugar
1 egg
1 1/2 cups rolled oats
1 cup coconut, optional
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla

Directions:
Directions:
Cream butter thoroughly. Gradually add sugar until creamy and smooth.

Add egg and vanilla, beating well.

Sift dry ingredients into mixture and blend well.

Drop from teaspoon on greased cookie sheet.

Bake at 350º until golden brown, about 10 minutes.

This is a recipe I got from Grandma (Ethel Malone) Christensen. The cookies flatten out and look like lace.
