1 lb. pkg. Lean Ground Turkey
1 egg
1/2 c. seasoned bread crumbs (or finely
ground stuffing cubes)
3/4 c. barbecue sauce (divided)
2 tsp. Worcesterchire sauce
2 tsp. garlic powder
1 T. dried minced onion (optional)
1/2 tsp. salt
1/2 tsp. black pepper
Homemade or store-bought mashed potatoes

Preheat oven to 350 degrees. In bowl,
combine ground turkey, bread crumbs, egg,
1/4 c. bbq sauce, Worcestershire, and dry
seasonings. Place mixture in large muffin pan
and top with remaining 1/2 cup bbq sauce.
Bake for 35-40 minutes. Remove from oven
and top with mashed potato "frosting". Can be
garnished with cooked, chopped brocolli or
julienned carrots. Makes 8 cupcakes. Also
works with your family's favorite meatloaf
recipe. This one gets 6 thumbs up from the
