35 - crackers (Towne house or Ritz)
1/2 cup (1 stick) butter or margarine
3/4 cup firmly packed light brown sugar
1 cup semi-sweet chocolate chunks
3/4 flake coconut, toasted

Directions:
Directions:
Heat oven 350º. Put crackers single layer on a baking sheet. Bring butter and sugar to a boil on medium heat, cook 2 minutes. Pour over crackers on baking sheet. Cover crackers completely (careful mixture is very hot).
Bake 6-8 minutes or until sugar mixture is lightly browned and bubbly. Sprinkle with chocolate chunks and bake extra 1-2 minutes. or until chocolate is melted. Remove and immediately spread melted chocolate evenly over crackers.
Sprinkle with coconut, press tightly into chocolate with back of spoon. Cool completely. Break into pieces. Store in tightly covered container at room temperature.

How to toast coconut: Spread coconut evenly in shallow baking pan. Bake 350 degrees for 7-10 minutes or until lightly browned, stirring frequently, or spread in microwave pie plate, on HIGH for 3 minutes or until lightly browned. Watch carefully as coconut can easily burn
