4 c peeled and cubed eggplant
4 c cubed zucchini
4 c assorted grape or cherry tomatoes
2 seeded and diced red bell peppers
4 minced cloves garlic
1/2 c minced parsley
4 tsp olive oil
1/4 c apple cider vinegar
1/4 c chopped basil, divided
1 tsp salt, divided
1/2 tsp black pepper, divided
20 chopped green onions

Directions:
Directions:
In a slow cooker, add all ingredients on the list through vinegar. Add half of the basil, salt, and pepper. Lightly toss to combine. Cook on low heat for 5-6 hours. Add green onions and cook for an additional 1-2 hours or until the green onions are softened. Before serving stir in the remaining basil, salt, and pepper.
