1 c cooked, diced chicken
2 c cooked rice
1 bag frozen vegetables
1 egg
1 tbsp soy sauce or liquid aminos
salt and pepper, to taste

Directions:
Directions:
Mist a large pan with cooking spray and pour in the frozen vegetables, cooking until the soften.

Create a circle in the middle of the pan by pushing the vegetables to the side and crack the egg into the middle, letting it fry. As the egg starts to cook use a spatula to mix it into the vegetables.

Add the chicken and mix in well.

Once the chicken is warm add in the rice and soy sauce/liquid aminos, mixing well before serving.

I use rotisserie chicken from the grocery store deli. I also use brown rice that I previously cooked and froze (check Pinterest for ideas on how to cook and freeze rice).
